Brian Yager
Head Chef
Brian brings decades of culinary experience and a passion for hospitality to Gretchen’s Bistro. He began as a dishwasher at 14 and later trained at Johnson & Wales University. After years of balancing cooking with a career in law enforcement, he returned to the kitchen full-time in 1998, cooking for celebrities and even a U.S. president.
In 2020, Brian returned to his coastal roots and now leads the kitchen at Gretchen’s, where he blends fresh, local ingredients with coastal flavors, making us a standout in Oriental.
Our Story
The Family Behind Gretchen's Bistro

Gretchen’s Bistro is rooted in the Ray family’s long-standing connection to cooking, gathering, and sharing meals together. For owner Guy Ray, that passion began with the traditions he grew up around: family recipes, time spent in the kitchen, and the value of welcoming others to a shared table. Throughout his life, Guy has also developed a deep sense of what thoughtful dining and genuine hospitality should feel like, shaped by memorable meals and experiences that have influenced his perspective. Those elements guide the vision behind the restaurant today.
The same appreciation for food and hospitality became a meaningful part of his children’s world. Memphis brings creativity to the guest experience as both a bartender and server and is known for her talent in baking. Sullivan contributes her skill to the kitchen as part of the culinary team, offering natural talent and fresh creativity to each dish. Their brother Jasper remains an important part of the family’s story and continues to inspire what they build together.
Cooking and hospitality were woven into daily life in the Ray household, and Gretchen’s love for both helped shape many of the moments the family shared over the years. Together, these influences, Guy’s lifelong passion for dining, the environment his children grew up in, and the paths they are now forging, come together to define what Gretchen’s Bistro represents today: a family-driven expression of dining, comfort, and hospitality.
