Brian Yager

Head Chef

Brian brings decades of culinary experience and a passion for hospitality to Gretchen’s Bistro. He began as a dishwasher at 14 and later trained at Johnson & Wales University. After years of balancing cooking with a career in law enforcement, he returned to the kitchen full-time in 1998, cooking for celebrities and even a U.S. president. 

 

In 2020, Brian returned to his coastal roots and now leads the kitchen at Gretchen’s, where he blends fresh, local ingredients with coastal flavors, making us a standout in Oriental.

Sullivan Ray

Sous Chef

Sullivan’s hospitality journey began at Chubby’s, the sister restaurant where she served as a manager and developed a deep appreciation for teamwork and guest care. When she joined the opening of Gretchen’s Bistro, she discovered an unexpected passion in the kitchen — drawn to the creativity, energy, and rhythm of cooking.

Inspired by her mother’s love for food, Sullivan found that cooking felt like home. Now, as Sous Chef, she brings intention and heart to every dish, honoring her roots while sharing a meaningful, thoughtful experience with each guest.

The Family Behind Gretchen's Bistro

Founded in 2022, Harbour Hospitality is the parent company behind a growing portfolio of hospitality concepts, including Gretchen’s Bistro, Chubby’s BBQ, Freedom Yacht, The Boathouse, and several other ventures. Built on a shared vision of thoughtful dining and genuine hospitality, the company is rooted in quality, community, and meaningful guest experiences.

 

At the heart of Harbour Hospitality is the Ray family’s long-standing connection to food and gathering. For owner Guy Ray, this passion began in childhood, shaped by family traditions and the belief that meals are meant to be shared around a welcoming table.

 

That same spirit continues through the next generation. Memphis Ray brings creativity to the guest experience as a bartender, while Sullivan Ray contributes her technical skill as a member of the culinary team. 

 

Ana Santiago, originally from Brazil, joined the Ray family and Harbour Hospitality journey after building her career in law. Working alongside Guy and the leadership team, she plays a key role in daily operations and the continued growth of the company.

 

Together, the family leads Harbour Hospitality with a shared commitment to authenticity, collaboration, and hospitality rooted in genuine connection.
